Generally, sprayed material (paints, etc) have a carrier which evaporates, so you have to distinguish between initial thickness before anything evaporates, and final thickness after drying is complete.
For the initial thickness, area times thickness is volume, and 231 in³ is a gallon. For your board 48" x 96" x 0.0025" = 11.52 in³ = 0.05 gallons roughly.
As to final thickness, I don't know.
